This healthy and delicious breakfast is perfect when you fancy something a little different from your usual breakfast.
It's super easy and is packed full of flavour.
This recipe is inspired by the Turkish breakfast, Shakshuka. A traditional Turkish breakfast with a thick tomato sauce base, onions, peppers and baked eggs - It's delicious.
Although similar we have made a few tweaks and we LOVE IT!
Perfect for breakfast, brunch or lunch and is paired perfectly with some fresh crusty bread to soak up all of the delicious tomato sauce. It's finger licking good and is sure to give your taste buds a FIESTA!
This is an amazing vegetarian breakfast recipe and is also gluten free and grain free.

INGREDIENTS
perfect for 2 people to share
330g of cherry tomatoes
500g of passata
1x clove of garlic
large pinch of sea salt
large pinch of black pepper
4 eggs
1 cup of your favourite grated cheese
1 tbsp of olive oil
METHOD
In a large frying pan or skillet add the olive oil.
Peel and finely dice the garlic and add it to the pan along with the cherry tomatoes. Fry on a medium high heat for 2-3 minutes.
Add the passata along with the salt and pepper and stir together - turn to a low heat and simmer for 1-2 minutes.
Make 4 small dents in the mixture and crack an egg into each of them.
Cover with a lid or foil and simmer on a low heat for 5 minutes or until the eggs are fully cooked.
Sprinkle with cheese.
Serve and enjoy.
