It's packed full of flavour and works as a standalone dish and a side dish, where it can be paired with pasta, rice, mashed potato and more. We like to grate a generous amount of parmesan over the chicken as soon as it's ready so that the cheese melts all over it.

INGREDIENTS
5x chicken breasts ( flatten slightly with a rolling pin )
1x large onion finely diced
1x small red onion finely diced
5x large cloves of garlic - crushed & finely diced
3x bay leaves
2x tsp of black pepper
2x tsp of salt
6x large sprigs of fresh thyme ( leaves only )
6x large leaves of fresh basil ( roughly torn )
1x cup of sweet cider or sweet white wine
300g of chunky passatta
2x tbsp of olive oil
1x large handful of grated parmesan
1x tbsp of double cream
METHOD
Start by beating the chicken breasts with a rolling pin until they're slightly flattened.
In a large frying pan or skillet add your olive oil, garlic and onion.
Fry on a high heat for 2 minutes before adding your chicken.
Now fry your chicken breasts on each side until golden then add your cider and fry off for a couple of minutes before turning to a medium low heat and adding the passatta and all of the other herbs and spices.
Stir and bring to a slight simmer for approx 20 minutes or until the chicken is cooked.
Five minutes before the end of cooking time add the cream and stir through.
Once the chicken is fully cooked remove the bay leaves, sprinkle with a large handful of grated parmesan and serve!
