5 Minute Home-made Parsley Pesto

Hands up if you love, pesto!

We adore pesto. It's super fresh, quick and adds so much flavour to a dish. Now! We've probably all tried the regular pesto, or red pesto, but have you ever tried parsley pesto?

Well! Until we made this recipe, neither had we. We're so glad we did - it's AMAZING!


What Parsley Do We Use For This Recipe?


We are using the Flat Leaf Parsley

It's super fresh, perfect for a spring pasta recipe.


The recipe is made with just a few simple ingredients, and is ready in speedy time. Traditionally pesto is made using pine nuts. However, pine nuts are extremely expensive and difficult to get a hold of where we are, and so we substituted them with walnuts - one of our favourite nuts.


Can You Freeze Home-made Pesto?


This recipe for Parsley Pesto is also great to freeze. Infact, we do this with all our homemade pestos. We simply make a big batch and then divide it into portion sizes, store it in an airtight glass container, and then freeze. Just pull it out of the freezer an hour or two before you intend on using it.


It's flavour is fresh, and is perfect with pasta, pizza, or salad.

INGREDIENTS


  • 2x large handfuls of Fresh Flat Leaf Parsley

  • 1x Cup of grated Parmesan Cheese

  • 1/3 Cup of Walnuts (compacted)

  • 3x Large Cloves of Garlic - peeled

  • 1x Cup of Extra Virgin Olive Oil

  • Juice of 1 Lemon

  • Large pinch of Sea Salt

  • 2x Large pinch of Cracked Black Pepper


METHOD


Add all of the ingredients, except from the olive oil to a food processor and blitz until you achieve a pesto consistency.

Now slowly add your olive oil and blitz for a few more seconds.

Remove from the processor and use immediately, or store in an airtight container in the fridge, or freezer.

Serve cold or warm - Enjoy!
