Almond Flour Pancakes With Caramelised Banana

These grain and gluten free pancakes are a delicious start to the day. They do have a different taste to regular pancakes as they're quite nutty, but what we find most surprising is how fluffy and airy they are considering there is no gluten flour in them.

A little note to remember is that they are slightly more difficult to cook then pancakes made with regular flour. A little more patience can be required when flipping them...

Honestly they might even be better than a normal pancake and they're also topped with sweet melt-in-your-mouth caramelised bananas that can be infused with cinnamon if you would like.

Anyway without further ado, let's get on with the tasty recipe!

INGREDIENTS

Makes 8 pancakes


For the pancakes


  • 1 & 1/2 cups of almond flour

  • 2x eggs

  • 1x cup of milk

  • 1x tsp of baking powder

  • 1x capful of vanilla extract

  • pinch of salt


For the caramelised bananas


  • 2x large bananas

  • approx 2 inch knob cube of butter

  • 2x tbsp of muscovado sugar

  • 1x tsp of cinnamon (optional)


METHOD


For the pancakes


Add all of the ingredients to mixing bowl and whisk together well with a fork.

Add a drizzle of olive oil to a non stick frying pan and heat it on a high heat for a a few seconds.

Now add your first lot of batter to the pan (approx 1/2 a ladle per pancake) and heat on medium and cook for about 1 minute or until air bubbles have formed over the entire surface, then flip and cook for another minute.

Repeat this process until you have used up all of your mixture and begin making the caramelised bananas whilst you wait for the pancakes to cook.


For the caramelised bananas


Slice your bananas lengthways in half, add to a non stick frying pan, then add your butter and put on a medium high heat.

Once the butter has melted add the sugar and cinnamon (if desired) and mix them together with the butter.

Keep a watchful eye on it so that it doesn't burn, stir regularly and remove them from the heat when the caramel starts to thicken (this usually takes about 4 - 5 minutes).

You don't want the caramel to become too thick as you won't be able to pour it over your pancakes.


Remove from the heat and drizzle the caramel over your pancakes and add the bananas too.

Serve and enjoy!
