Apple & Cinnamon Pancakes With Salted Caramel Sauce

Well these Apple & Cinnamon Pancakes are sure to suffice.

They taste so, so good and, are definitely some of the best pancakes we've ever had!

We serve them with our easy homemade caramel sauce drizzled over them for the perfect combination.

Apple & Caramel are the perfect flavour combination, especially during fall/autumn season.

The pancakes are extra thick, and with the added shredded apple and cinnamon they taste almost like a pudding. The panacake batter is thick and slightly sticky, creating a delicious texture, simular to that of a 'heavy apple cake' - we LOVE it!

The heavy drizzle.of homemade Salted Caramel is, FANTASTIC, and in our opinion is a step NOT to be missed.

These autumnal pancakes make for the perfect, cosy weekend breakfast or brunch, and we are, a little obsessed with them.

INGREDIENTS


  • 400ml of milk

  • 400g of self-raising flour

  • 2x large eggs

  • 1x heaped tbsp of caster sugar

  • 2x capfuls of vanilla extract

  • 1x heaped tsp of baking powder

  • pinch of salt

  • 2x heaped tsp of Cinnamon

  • 2x medium sized apples - grated


For the Salted Caramel Sauce


You can use store bought or can make our Easy Homemade Caramel Sauce


METHOD


If making homemade Salted Caramel Sauce, then we suggest getting that made before starting on your pancake batter. Click link above for our Easy Homemade Caramel Sauce, and follow the method.


For the pancake batter start by adding the flour, salt, baking powder and cinnamon to a large mixing bowl and mix everything together well, ensuring the cinnamon is thoroughly distributed throughout the mixture.


Then add all of the other ingredients and using a fork whisk together by hand until fully combined (you don't want a smooth batter, but instead a LUMPY batter).


Add a dash of olive oil to a non stick frying pan and heat on a medium heat.


Once heated turn to a medium heat and add a small ladle of the mixture and fry.


Once air bubbles appear on the surface it's time to flip.


Cook for approx 30 - 45 seconds until the underside is golden (depends on the size of your pancakes).


Transfer to a plate and keep warm with foil whilst you repeat with all the remaining batter.


When ready, serve and drizzle with the Caramel Sauce, and enjoy!
