Apple Crumble Chia Pudding

In search of a healthy, indulgent variation of chia pudding that's perfect for Autumn / Fall (or anytime)? This super easy make-ahead breakfast is all that and more!


Not only is this Chia Pudding delicious, it's also packed full of goodness. Chia Seeds are loaded with Omega-3 fatty acids and the cinnamon is anti-inflammatory, plus the apples are great for removing heavy metals from your body.

This recipe is so delicious and comforting and is completely grain-free, gluten-free and guilt-free, making it a treat that your body and stomach will thank you for.


Apple Crumble is an absolute Classic Autumnal Dessert and our love for it inspired this recipe...

Chia Pudding is a great make-ahead recipe that can be left overnight in the fridge and will last for up to 3 days in an airtight container in the fridge.


Need it quicker - don't worry. It can also be made fresh the same day, just give it an hour in the fridge to soak up the milk & set.


Not only is this a delicious healthy breakfast it also makes for a delicious comforting dessert. Chia Pudding is great as a healthier dessert option and we LOVE IT!

The flavour combo in this recipe is a classic and one of our favourites - Apple & Cinnamon.

Apple & Cinnamon flavour combination is great at any time of the year, however for us it screams Autumn and all things cosy.

The stewed apples could also be made in advance, although we love ours served hot. The combination of the hot apples with the cold Chia is SO GOOD! We could literally eat it every day 😋


So without further ado, let's get on with the recipe!

INGREDIENTS

Serves 4


For the Chia Pudding


  • 8x heaped tbsp of Organic Chia Seeds

  • 2 & 1/2 cups of Almond Milk

  • 1x heaped tbsp of Honey or Maple Syrup

  • 2x tsp of Ground Cinnamon

  • 1x capful of Vanilla Extract


For the Topping


  • 3x large Apples - peeled & diced into mouth sized cubes

  • 1x cup of Sultanas

  • Large handful of roughly chopped Walnuts

  • 1 & 1/2 - 2 tsp of Ground Cinnamon (to taste)

  • Tbsp of Honey or Maple Syrup

  • 2x large dashes of water


METHOD


Add the Chia Seeds along with the Cinnamon to a large bowl & combine together.

Now add the milk and stir together.

Finally add the Vanilla & Honey & thoroughly mix together.

Cover and place in the fridge for at least 1 hour to set or overnight.

Approximately 10-15 minutes before serving it's time to prepare the toppings.

In a large non-stick frying pan add your diced apples, sultanas & cinnamon and heat on high for 2 minutes - stirring occasionally before adding your dashes of water.

Turn to a medium heat and allow the apples to stew. Stirring occasionally - they should take approx 10 minutes to soften.

At around 8 minutes add your honey and mix together well. Simmer for a further 2 minutes or until the apples have softened.

We prefer our apples to have a little firmness to them, however if you like them softer cook for a little longer. (You may need to add a dash more water if cooking for longer)

Once cooked remove from the heat - it's time to assemble your Chia Pudding.

We like to layer ours, but serve as you desire.

We add a layer of Chia Pudding to our dish, topped with a small layer of the hot stewed apples. Add more Chia followed by a larger topping of the stewed apples and to finish top with a sprinkling of Walnuts.
