Autumn Squash Bolognese

Bolognese is perfect for those colder months, but we've tweaked a traditional recipe to make it smell, and taste a little more like fall/autumn.


This Autumn Squash Bolognese is a fantastic dinner to serve during the fall / autumn months and we absolutely love it.

Bolognese is traditionally a much thicker and creamier meat based sauce, with a touch of tomatoes. It's made creamier with the help of milk.

This sauce is thick and extremely comforting. It's fantastic served with your favourite pasta, or it's just as good served straight-up in a bowl with some crusty bread to dip in.

A simple and easy homemade dinner that's sure to be a family favourite this fall / autumn.

INGREDIENTS


  • Pork Mince or Beef Mince

  • Pancetta or Streaky Bacon - finely diced

  • 1x large Onion - finely diced

  • 3x Stems of Celery - finely chopped

  • 3x large cloves of Garlic - crushed and finely diced

  • 1x Compact Cup of Roasted Squash

  • 400g Can of Chopped Tomatoes

  • 130g of Tomato Puree

  • 1/4 Cup of Red Wine (can use white)

  • 1/2 Cup of Milk

  • 2x large pinches of Black Pepper

  • 2x large pinches of Sea Salt

  • 2x level tsp of Pumpkin Spice

  • 2x tbsp of Olive oil for cooking


METHOD


Heat a large frying pan or skillet on a high heat and then add your oil.

Add your pancetta or bacon and cook until golden.

Now add your pork mince and mix together - cover your meat in the bacon fat.

Turn to a medium heat and cook the mince through.

Once the meat is cooked, add your onions, garlic and celery and mix thoroughly together.

Add your salt, pepper and pumpkin spice and stir through.

Fry for a few minutes before adding the wine.

Cook for a few minutes, stirring occasionally before adding the canned tomatoes and puree - stir together well.

Simmer on a low heat for a few minutes, before adding the roasted squash.

Mix the squash thoroughly through your ingredients.

Now add the milk, combine together and simmer for 15-20 minutes until your Bolognese is nice and thick.

Be sure to stir occasionally to prevent sticking.


Serve and enjoy!
