INGREDIENTS

12 servings

  • 280g of plain flour

  • 200g of soft room temperature butter

  • 80g of sieved cocoa powder

  • 300g of caster sugar

  • 1x large egg

  • 250g of giant chocolate buttons

  • 130g of smarties or m&m's

  • 1x heaped tbsp of cornflour

  • pinch of salt

METHOD

Preheat the oven to 200C and line a large cookie sheet.

Start by creaming together the butter and sugar in a freestanding mixer.

Then in a large mixing bowl add all of the dry ingredients excluding the chocolate and mix together with a fork, then transfer it to the butter mixture.

Mix everything together until fully combined.

Now add the egg and fully mix again.

Fold through the Giant Chocolate Buttons & Smarties using a spatula or spoon.

Divide the mixture into 12 equal balls and generously space them out across a lined baking tray. (You may need to use 2 cooking sheets or bake in 2 batches)

Lightly press down on each of them (not completely flat, but a chunky patty), then transfer them to the oven and bake for exactly 11 minutes.

Remove from the oven and let them sit for approx 5 minutes before transferring them to a wire rack to cool completely (don't worry if they're soft, they're supposed to be and they continue to cook slightly as they are cooling).

Serve and enjoy!

These are hands down the best cookies I've made. They dissolve in the mouth - such a treat and they have baked perfectly every time I've baked them.
