Beef & Ale Stew - With Easy Drop Dumplings

As the Autumn and Winter months start to roll in, soups and stews begin to make their way on to the dinner table and this is one of our personal favourites. It's full of delicious, healthy ingredients and if you fancy something extra, our Easy Drop Stew Dumplings are a perfect addition.

It's also a great make-ahead meal, as you can cook it up, store it in an airtight container and leave it in the fridge for a couple of days, then reheat it for 10 minutes and serve. So without further ado, here is the recipe!

INGREDIENTS


  • 1lb of Stewing beef - cut into mouth sized pieces

  • 1.5 kg of Potatoes - diced into mouth sized cubes (no need to peel, but can if you'd prefer)

  • 1x large yellow Onion - finely diced

  • 1x large Red Onion - finely diced

  • 5 -6 large Carrots - sliced into 1cm slices

  • 250g of Button Mushrooms - cut into chunky quarters

  • 500ml of your preferred Ale

  • 500ml of Water or Broth

  • 2x tbsp of Butter

  • Good drizzle of Olive Oil

  • 2x large pinches of Salt

  • 2x large pinches of Pepper

  • 2x heaped tsp of Garlic Powder

  • 2x heaped tsp of Sweet Paprika

  • 3x large fresh Bay Leaves

  • 5x tbsp of Flour



METHOD


In a large stewing pot add your butter and oil and heat on a high heat.

Once the butter has melted add in your meat. Coat in all the oil and fry on a medium-high heat until the meat has colour on eachnof it's sides - roughly 5 minutes.

Now add your diced onions and thoroughly stir through. Cook your onions for a few minutes and then reduce the heat to low.

Add in your salt, pepper and flour and mix together well. Your meat wants to be well coated in the flour.

Now add in the ale and stir together well. Turn back up to a medium heat and Allow to cook for a few minutes before adding in the potatoes and Carrots.

Evenly mix everything together and then add in the water. Stir and then add the bay leaves. Pop on the lid and allow to come to a slight simmer. Once a slight simmer is achieved, turn to a low heat.

Simmer for roughly 15-20 minutes before adding in your mushrooms - stir through and then pop the lid back on.


*If you're making our homemade drop dumplings, now is the time to prepare them. They take 20 minutes to cook.


Simmer for 30 minutes or until everything is thoroughly cooked and tender - stir occasionally to prevent sticking at the bottom (get the spoon right to the base and move things around)


Remove the bay leaves before serving and Enjoy!

Made it for the family and they loved it. Great recipe and the dumplings were super easy.
