Best Ever Autumn Granola

Autumn is the time for all things cosy and that includes food. I'm talking comfort food, warm spices and yes, lots of cinnamon and pumpkin spice and I couldn't be happier.


Sitting down with your fluffiest blanket watching your favourite Halloween movie and enjoying a bowl of your favourite comfort food.


I love granola at all times of the year and autumn is no exception, however I like to switch it up with different ingredients to match the time of year. Spring and summertime I enjoy tropical fruit and coconut granola and during autumn and winter I enjoy pumpkin spiced, chocolate and cranberry granola. Both utterly amazing and packed with goodness.


Oh and the peanut butter and honey clusters in this recipe are LUSH! Each mouthful a fiesta for your taste buds.


Granola is so adaptable and doesn't just have to be for breakfast with your favourite milk - although I wouldn't complain. It's delicious sprinkled on top of so many things including;

  • Smoothies

  • Yoghurt

  • Acai

  • Crumbles

  • Ice-cream

  • Frozen Yoghurt

Its sprinkles of happiness and goodness, and is fantastic for meal-prep.



So lets get into the recipe and if you don't like one of the ingredients, just switch it out for something you do.

INGREDIENTS

makes approx 1025g


  • 500g of oats

  • 5 heaped tbsp of smooth peanut butter

  • 4 tbsp of honey or maple syrup

  • 2 tsp of pumpkin spice

  • 100g of chocolate chunks or chips ( use vegan if needed )

  • 1 & 1/2 cups of dried cranberries

  • 1 cup of pecans

  • 1/2 cup of Pumpkin Seeds


METHOD


Preheat the oven to 260C

In a large mixing bowl add the oats, peanut butter, honey and pumpkin spice and mix together using your hands. Squish the ingredients in your hands to form delicious clusters.

Transfer to an oven dish or tray. We split the ingredients between two trays so everything gets an even bake. Bake on the top shelf for 10-12 minutes.

Remove from the oven and allow to cool completely before adding the other ingredients.

Once cooled add the other ingredients and mix together.

Transfer to an airtight container.

Serve and enjoy.


We love it with almond milk.
