Boozy Chocolate Mincemeat

With the festive season fast approaching, we thought it was time to make a batch of one of the most festive recipes ( in our opinion ) for this time of year - Mincemeat...

Mincemeat screams Christmas and we can't get enough of it. The smell of it stewing fills the house and it undoubtedly feels like Christmas.

This is not your traditional mincemeat recipe, this recipe has a real taste of luxury.

We went for a mixture of 3 alcoholic drinks. We chose, whiskey, rum and brandy, but you can add whatever you like - sherry is always a good choice too.

The added ingredient of chocolate really takes the taste to a whole new level and although chocolate is not a traditional ingredient in mincemeat, we can't help but love it. The darker the chocolate the better...


Most traditional mincemeats are cooked in the oven and take several hours to make, however this is a quick and easy stove top recipe, packed full of dried fruits. We went with, raisins, cranberries, prunes, glazed cherries and orange & lemon zest & juice. So many amazing flavours.

We use this mincemeat in a variety of festive bakes including, mince pies, cheesecakes and trifles - it's LUSH!

INGREDIENTS

Makes approx 1080g of mincemeat


  • 2 & 1/2 cups of raisins

  • 1 x cup of pitted prunes ( chopped into small pieces )

  • 300g of glazed cherries ( chopped into small pieces )

  • 1 x cup of dried cranberries

  • zest & juice of 1 lemon and 1 orange

  • 1 x cup of muscovado sugar

  • 1 x cup of water

  • 1/3 cup of whiskey

  • 1/4 cup of rum

  • 1/4 cup of brandy

  • 70g of dark chocolate ( at least 60-70 %)


METHOD


Add all of the ingredients except for the chocolate to a medium sized saucepan and bring to the boil - mix together well and stir occasionally.

Once it's come to the boil turn to the lowest heat and simmer for approx 30 minutes or until most of the liquid has been absorbed, but not all of it. You want a little trickle of syrup.

Remove from the heat and break the chocolate into pieces and add to the hot mixture. Stir through the mixture until fully melted.

Serve and enjoy or add it to your Christmas recipe.

Store in an airtight container in the fridge for up to 5 days.
