Brazilian Creamy Egg & Potato Salad

I first experienced this dish at a friends barbecue and it was served to me inside a bread roll and topped with a barbecued sausage - definitely an unusual way to be served a hot dog, especially when you're used to British bbq's...

Oh Wow!

What a surprise to the taste buds, it tasted seriously good and I definitely went back for seconds plus a serving of the potato salad by itself...

I quickly asked the guest who made this dish how it was made and after translation from a friend I was told it was simply, potato, eggs and a ton load of mayonnaise...

Simple ingredients are always the best...

So I did some research of the Brazilian potato salad and soon discovered that all of the recipes online were different from that that I had tried. All recipes online appeared to use hard boiled potatoes cut into chunks, however the potato was a mashed consistency in the version I'd tried...

The creamy and delicious version that we'd tried was seriously good, however when I tried to recreate it I decided to use chopped hard boiled potato which also tasted yummy. My youngest son loved it so much and later decided that he wanted to make it for lunch for everyone by himself and wanted no help. We left him to it and he decided to mash the potato and add a few of his secret ingredients...

Tasted AMAZING!

He served it to us with sausages and fresh bread rolls, just like we had at our friends churrasco barbecue and it was perfect...

My son wanted to share his recipe for his version of the Brazilian potato salad and I was more than happy to do so...

INGREDIENTS


4x large potatoes

9x hard boiled eggs

3x heaped tbsp of mayonnaise

1 cup of grated cheese ( cheddar or mozzarella )

1/4 cup of cream

1 tbsp of butter

2x large pinches of sea salt

2x large pinches of black pepper

handful of chopped chives


METHOD


Peel and dice the potatoes and add to a large pan of boiling water. Boil for 20-25 minutes or until the potatoes are soft.

While the potatoes are boiling add your eggs to a pan and cover with water and bring to the boil. Once the water is boiling reduce the heat to medium-high and cook for 7-8 minutes.

Once the eggs are boiled, drain and cover with ice cubes or cold water before peeling.

Once the eggs are cool enough to handle, peel them and place them in a bowl to one side.

Grate your cheese.

Once the potatoes are nice and soft, drain them and place them back into the saucepan.

To the potatoes you are going to add the butter, cream and salt and pepper and mash well with a masher. Once the potatoes are soft and smooth you are going to add in the cheese and stir together until the cheese has melted.

With a fork crush your hard boiled eggs into small pieces and then transfer to the potato mixture.

Add the mayonnaise and thoroughly mix together.

Transfer to your serving dish and add the chopped chives - give a little mix and enjoy.


Why not try adding it to your hot-dog.
