Cauliflower & Caramelised Onion Hummus

INGREDIENTS


  • 1x medium head of Cauliflower - cut into florets

  • 1x medium Onion - finely sliced

  • 2x Medjool Dates - de-seeded & diced

  • 3x peeled cloves of Garlic

  • Juice of 1 Lemon

  • 1x tbsp of Tahini

  • 1x tbsp of Butter

  • Large pinch of Sea Salt & Cracked Black Pepper

  • 1x heaped tsp of Cumin

  • 2 - 3 tbsp of Olive Oil to achieve your preferred consistency


Toppings


  • Drizzle of Olive Oil

  • Generous sprinkling of Smoked Paprika



METHOD


Bring a medium sized saucepan of water to a boil, and then add your cauliflower florets. Cook until tender.

Meanwhile heat a small frying pan and melt your butter. Add in your finely sliced onions & diced Dates. Sauté until the onions are tender and golden.

Once the cauliflower is tender, drain in a colander for a few minutes until its drip free from any excess water.

Add the cauliflower to your food processor along with the sautéed onions and pulse a few times.

Add in the salt & pepper, cumin, garlic, lemon juice and Tahini. Blitz together until smooth.

Add in the Olive oil until you reach your preferred consistency.

Serve warm or cold, and top with a drizzling of olive oil, and smoked Paprika.
