Cheesey Bacon & Mushroom Frittata - Sunday Brunch

This is now a family favourite for brunch, and will be a regular go-to.

This Cheesey Bacon & Mushroom Frittata is absolutely delicious, and is perfect served hot or cold.

The added touch of fresh Thyme really brings the flavour alive. Bacon and fresh thyme is a delicious flavour combination.

We love Frittatas. They are a fantastic one pan recipe, and they are completely customisable to suit your mood, the season, or someone's diet.

INGREDIENTS

Serves 5-6 as a side


  • 250g of Bacon - diced

  • 200g of Button Mushrooms - finely sliced

  • 9x Eggs -

  • 2x cups of Grated Strong Cheese such as Cheddar

  • 6-8 Fresh sprigs of Thyme - approx 1 heaped tbsp of fresh Thyme Leaves

  • 1x cup of Cream

  • 2x large pinches of Sea Salt & Black Pepper

  • 1x tsp of Chilli Flakes (optional)

  • 2x tsp of Smoked Paprika

  • 1x tbsp of Olive Oil


METHOD


Preheat the oven to 210C


Heat a large stainless steel frying pan or skillet on a high heat, and then add your oil. Coat it around the pan.

Once the oil is hot add in the bacon and cook for 3-4 minutes.

Now add in your mushrooms, seasoning and spices. Thoroughly mix together and reduce the heat to medium.

Now add your eggs and cream to a large measuring jug, and beat together using a fork or whisk.

Continue to cook the bacon & mushrooms for a few more minutes or until the mushrooms have softened slightly and the bacon is almost cooked. (Remember it will continue to cook in the oven)

Turn to a low heat, and add in the whisked eggs and cream mixture. Be sure to evenly cover.

Evenly top with the grated cheese, and pop it into the preheated oven.

Bake for approximately 40-45 minutes or until fully set and cooked through. Everyone's oven temperature differs slightly, so we would suggest checking it at around the 30 minute mark.

Once cooked remove from the oven and serve.

It's delicious hot or cold.
