I'm not even joking, this has got to be one of the best risottos I've ever had! It's absolutely full of flavour, easy to make and is perfect for any occasion. INGREDIENTS
Approx 5 - 6 servings
2x cups of arborio rice
4x large chicken breasts (diced into mouth-sized pieces)
1x large onion (finely diced)
1x large leek (finely diced)
1x tsp of pepper
1x tsp of sea salt
1/2 tsp of chilli flakes
2x bay leaves
6x large sage leaves (or 2x tsp of dried sage)
5x large sprigs of thyme (or 2x tsp of dried thyme)
1x tbsp of olive oil
1x tbsp of butter
6x cups of water
2x large cloves of garlic (crushed & finely diced)
1x tbsp of cream cheese
1x cup of grated parmesan (plus extra for topping)
METHOD
It is important to keep a watchful eye when making risotto. You do not want it to stick and you do not want the water to completely evaporate. You do not want a dried out risotto. You want a creamy risotto.
In a large frying pan or skillet add your oil and butter.
Add the chicken and cook on a high heat for approx 6 - 7 minutes or until fully cooked. Add the onion, garlic and leek and all of the seasoning - mix together well and saute on a medium - high heat for 4-5 minutes.
Add your risotto rice and mix together well, ensuring it is well coated in the fat and seasoning. Turn to a medium heat.
Add 3 cups of boiling water. Stir and allow to simmer for 2-3 minutes.
Add 2 more cups of boiling water and allow it to simmer - make sure to stir and do not allow the water to completely evaporate.
After 20 minutes of cooking turn the heat to low. Add 1 cup of boiling water and simmer for another 10 minutes or until your rice is cooked.
Once the rice is cooked take it off the heat and remove the bay leaves.
Stir in the cream cheese and the grated parmesan. Once the cheese is mixed in it's ready to serve.
We like to add a few shavings of parmesan when served - Enjoy!
