Cheesy Nacho Chilli Bake - One - Pot Dinner

Fancying something a bit different tonight? Well this Cheesy Nacho Chilli Bake is sure to satisfy any Tex-Mex cravings you and the family may be having. It tastes amazing and looks just as good and better yet, it's a one pot meal, meaning no clutter and less dishes to be washed.


Now I'm not going to lie, this is one of the best chilli recipes I've ever tried! It's got a little kick but isn't too spicy and the flavours are just so hard to beat. All this and then a generous layering of cheesy nachos baked on top. Anyway, without further ado, let's get on with the recipe!

INGREDIENTS


For the Chilli


  • 500g of Pork or Beef Mince

  • 1x large Onion - finely diced or 3x Leeks - finely diced

  • 1x large Red Bell Pepper - diced

  • 1x large Yellow Bell Pepper - diced

  • 3x Cloves of Garlic - crushed & finely diced

  • 390g Can of Black Beans - or beans of your choice

  • 2x tbsp of Olive Oil

  • 2x large pinches of Black Pepper

  • 2x large pinches of Sea Salt

  • 1x heaped tsp of Garlic Powder

  • 2x heaped tsp of Sweet Paprika

  • 2x heaped tsp of Ground Cumin

  • 3x heaped tsp of Ground Coriander

  • 1x tsp of Chilli Flakes - extra if you like it spicy

  • 135g of Tomato Puree

  • 390g Can of Chopped Tomatoes

  • 1x tbsp of Soy Sauce

  • 1x tsp of English Mustard

  • 1/2 Cup of Water


For the Topping


  • 168g Pack of Original Nachos

  • Large handful of Grated Cheddar Cheese

  • Small bunch of Fresh Coriander - roughly chopped

  • Juice of 1/2 a lime


Extra Toppings


  • Sour Cream - optional


METHOD


Heat a large oven safe frying pan or skillet on a high heat before adding your oil.

Once the oil is nice and hot, add your Minced meat and fry for 5 minutes. Stir occasionally.

Reduce to a medium heat and then add the onion, garlic and the dried seasoning and spices. Mix together well and fry for a few minutes.

Add the chopped tomatoes, beans, tomato puree, soy sauce, mustard and water. Mix together thoroughly.

Bring to a simmer and then turn to a low heat.

Simmer for 15 - 20 minutes. Stir occasionally.

While it's simmering Preheat the oven on a high heat.

After the simmering time, turn off the heat and evenly top with the Nachos. Sprinkle generously with the cheese and then place in the oven or under a grill, and cook until the cheese has melted and slightly golden.

Top with a generous sprinkling of fresh Coriander and a squeeze of fresh lime juice.


Serve & Enjoy!


We like to add a dollop of Sour Cream to each serving, too.
