This is a super easy, impressive looking dessert that's perfect for serving to a large group of family and friends and we all thought that it resembled a brownie (despite being a pancake).
It's especially delicious when accompanied with a scoop of vanilla ice cream or a drizzle of custard. We just can't get enough of them, they're seriously good! The underneath of them is just covered in chocolate and doce de leite (caramel) and it oozes into the mixture as it bakes. Anyway without further ado, let's get on with the recipe!

INGREDIENTS
24 servings
400g self raising flour
3x eggs
2x cups milk
pinch of salt
1x tsp baking powder
1x heaped tbsp caster sugar
2x capful of vanilla extract
2x heaped tbsp cocoa powder - sifted
approx 2 heaped tbsp of caramel spread or doce de leite
approx 2 heaped tbsp of chocolate spread or chocolate doce de leite
METHOD
Preheat the oven to 180C and line a 40x30 cm lipped baking sheet.
In a large mixing bowl add the flour, salt & baking powder and combine with a fork.
Now add the eggs, milk and vanilla and whisk together with a fork - you want a lumpy batter so don't use a electric whisk.
Now divide the batter mixture in half and add it to another mixing bowl. Add the sieved cocoa powder to one bowl and mix together with a fork. Once evenly mixed place to one side.
Grab your lined baking sheet and place tsp dollops of the caramel and chocolate spreads randomly over your lined sheet,
Using your spoon swirl the dollops of spread into each other covering the base of your sheet - leave some lumpy dollops.
Using a tbsp randomly place dollops of the vanilla batter over your tray and then repeat with the chocolate batter.
Using a chopstick or skewer start creating a swirl pattern in the batter. Don't over swirl otherwise you will loose the pattern.
Pop into the preheated oven on the top shelf and bake for 12-15 minutes or until fully cooked.
Slice into your desired portions and serve warm from the oven and ENJOY!
We served ours fresh from the oven with a dollop of ice-cream - LUSH!
