Nothing beats all the warming flavours of Christmas and this cake is no exception. It's moist, comforting and tastes, well, just like Christmas! We especially love to serve this cake at festive gatherings where it seems to get a lot of attention! Best of all, it's super simple to make and will be ready to eat within a couple of hours, so without further ado, let's get on with the recipe!

INGREDIENTS
Approx 10 - 16 servings depending on your portion size
For the cake
180g of butter
130g of muscovado sugar
2x tbsp of caster sugar
180g of honey
200g of molasses
300g of plain flour
1/4 cup of rum
1x tsp of vanilla extract
1 1/2 tsp of bicarbonate of soda
3x tsp of dried ginger
1 1/2 tsp of cinnamon
40g of cocoa powder
250ml of milk
90g of chocolate chips
2x eggs
For the buttercream icing
200g of room temperature butter
400g of sieved icing sugar
1x tsp of rum
1x tsp of dried ginger
1x tsp of vanilla extract
Decorating
chocolate shards of 2 - 3 squares of chocolate (or grated chocolate)
small sprinkling of sieved ginger
METHOD
For the cake
Start by preheating the oven to 180C and line a 30 x 20cm baking dish.
In a small saucepan melt the butter with the sugars, honey, molasses and rum, stirring occasionally. Once melted and combined take off the heat and set aside.
In a large mixing bowl add the flour, cocoa, spices and bicarbonate of soda and mix together.
Add the eggs and milk and mix on a medium - high speed until fully incorporated.
Add the melted butter and sugar mixture and mix for 1 - 2 minutes.
Add the chocolate chips and fold through the mixture by hand.
Transfer to your lined tray, pop it on the top shelf and bake for 40 - 45 minutes until risen and firm (it will be slightly damp underneath the set top, but that's what you want).
Allow to fully cool before decorating with icing.
For the buttercream icing
Add all of the ingredients to a mixing bowl and mix together well on a medium - high speed for a few minutes until the icing has formed.
Decorate the cake with the buttercream as desired and finish off with the sprinkling of ginger and chocolate shards.
