Chunky Chocy-Choc Cookies

Calling all chocolate lovers, you need to try these extra chocolatey chunky chocy-choc cookies! They are the cookie that is fudgy yet the chocolate chunks remain chunky. These cookies are soft and chocolatey and are sure to satisfy your chocolate cravings.

We've dabbled with cooking times and trust us when we say in a well preheated oven, 11 minutes is the perfect cooking time. You may think that they're undercooked when they're removed from the oven but they continue to cook whilst they cool.

They may be a soft cookie but they maintain and hold their shape and don't fall apart.

We absolutely adore them and we're sure if you're big chocolate lovers like us, then you will too.

INGREDIENTS

Serves 9


  • 280g of self raising flour

  • 200g of soft room temperature butter

  • 80g of sieved cocoa powder

  • 300g of caster sugar

  • 1x large egg

  • 160g of milk chocolate (broken into chunky squares)

  • 80g of nestle crunch chocolate (broken into chunky squares)

  • dash of milk

  • pinch of salt


METHOD


Preheat the oven to 200C

Start by creaming together the butter and sugar in a freestanding mixer.

Then add the egg and cream together again.

In a large mixing bowl add all of the dry ingredients excluding the chocolate and mix together with a fork, then transfer it to the butter mixture.

Add the dash of milk and mix everything together once again.

Begin breaking up the chocolate into chunky squares and fold them through the mixture by hand.

Divide the mixture into 9 equal balls and generously space them out across a lined baking tray. (You may need to use 2 cooking sheets or bake in 2 batches)

Lightly press down on each of them (about halfway, not completely), then transfer them to the oven and bake for exactly 11 minutes.

Remove from the oven and let them sit for approx 5 minutes before transferring them to a wire rack to cool completely (don't worry if they're soft, they're supposed to be and they continue to cook slightly as they are cooling).

Serve and enjoy!
