Cosy Cinnamon Stewed Apples

Updated: Apr 15

This has to be one of the most cosy and comforting foods EVER and it's sugar free.

As the cosy season aka my favourite season Autumn approaches this recipe makes a regular appearance in our household and we couldn't be happier - it's so good and gives you the ultimate fuzzy, happy feeling inside...

It's such a versatile dish too and can also be used in various other recipes, or is perfect just as it is...

We're not quite sure what meal category to place this bowl of yummines into as we've eaten it not only for breakfast, but for brunch, dessert and as a delicious snack too...

It really is a bowl of cosy happiness.

What we love about this recipe is how quick and simple it is and yet it is packed with so much flavour that give your taste buds a Fiesta!

As we said this is a simple stand alone dish, but can be topped with your favourite toppings to suit your mood or cravings. In our

house we serve it three ways;

  1. Topped with crushed walnuts and a dollop of homemade peanut butter - this is a Vegan option.

  2. Topped with crushed walnuts, a dollop of homemade peanut butter and a yummy scoop of thick cream.

  3. Topped with all of the above plus a crumbling of homemade flapjack - oh so good.

It`s a mouth FIESTA!

We really hope you enjoy this recipe as much as we do...

Also a fantastic meal-prep recipe. Once cooked allow to fully cool, and then store in an airtight container in the fridge.

Happy Cooking!

So without further ado lets jump into the recipe...

RECIPE

Serves 5 people

  • 5 large apples (your choice - we use fuji )

  • 1 cup of sultanas or raisins

  • 1 cup of dried cranberries

  • 1 lime (juice only)

  • 1 1/2 cup of hot water

  • 3 tsp cinnamon (add more if you like)

  • 1 tsp vanilla extract

Peel and core all the apples and cut into mouth sized pieces. Add to a medium sized pan and add all the other ingredients.

Put on a high heat for 5 minutes and stir regularly.

Turn down to a medium heat and cook for a further 10-15 minutes until the apples have softened. Stir to ensure it does not stick to the pan and if it absorbs all of the water then add a dash more ( you want a little bit of syrup - the juices taste amazing )

Once the apples are softened to your liking, take off the heat and serve while its still warm. We like the apples nice and soft, but not mushy. If you like the apples mushy then cook for slightly longer, but don't let the water dry out completely - you want some moisture in the pan. If you are cooking for longer you may need to add a dash more water.

Serve as it is or add a topping of your choice. We like ours with cream and crushed nuts, but you could add granola, custard, yoghurt or ice-cream.

However you serve it, ENJOY!
