Creamy Bacon & Mushroom Soup

This recipe was a spur of the moment recipe, and created with the purpose of using up some ingredients from our fridge that needed using on a wet and grey day.

Soup is always a good idea on a wet & grey day.

Soups are a fantastic way to use up ingredients from your fridge, especially those veggies that are coming close to their use-by date.

This soup recipe is rich, creamy, delicious and packed full of flavour.

The bacon adds a nice touch of flavour to the soup and we love it.

Soups are perfect as a starter, for lunch or for dinner and this soup recipe is made in just one pan. We love one pan meals as it means, less washing up - which is always good.


Let's crack on with the recipe, which is perfect on a cool rainy day - perfect comfort food.

INGREDIENTS


  • 1x large Onion - finely diced

  • 1x large Leek - finely diced, including the greens

  • 1x bunch of Celery - finely diced, including the leaves

  • 200g of Button Mushrooms - finely sliced

  • 250g of Bacon - finely diced approx 1cm

  • 1x cup of Thick Cream

  • heaped tbsp of Butter

  • 2x tbsp of Olive Oil

  • 2x large pinches of Sea Salt

  • 2x large pinches of White Pepper

  • 2x pinches of Black Pepper

  • 2x heaped tsp of Dried Thyme

  • 3x tsp of Garlic Powder

  • 1.5L of Water


METHOD


Bring a large saucepan to a high heat and then add your butter and oil.

Once the butter has melted go ahead and add the bacon and fry until cooked.

Once cooked go ahead and add all of the veggies, excluding the mushrooms and stir through. Be sure to coat the veggies in the delicious bacon grease.

Now add your herbs and seasonings and mix well until everything is coated. Turn to a medium-low heat and sautae the veg for 5-6 minutes, stirring occasionally to prevent sticking.

Now add the sliced mushrooms, mix through and cook for 1-2 minutes before adding your water.

Once the water has been added, turn the heat back up to high, stir and then bring it to a boil. When it has came to a boil, turn to a low heat and simmer for 20-30 minutes.

Towards the end of cooking, add in your cream and thoroughly stir through.

Once the cream has been thoroughly incorporated its time to turn off the heat and serve.
