The flavours in this dish definitely make it the star of the show and can hold it's own, but if you want to add it to something, then it makes a mouthwatering pasta sauce. This with tagliatelle is a match made in heaven...

However if you're looking to keep the carbs down then trying serving it with, sauteed garlic and lemon shredded cabbage and some juicy green beans or some Italian spiced cauliflower rice...

Whatever you serve it with - you will not be disappointed...

INGREDIENTS

serves 5


5x chicken breasts

3x large cloves of garlic

2 tbsp of cream cheese

2 tbsp of thick cream

1 cup grated cheddar cheese

1/2 cup grated parmesan cheese

1x lime ( juice only )

2x large pinch of sea salt

2x large pinch of black pepper

1x 3 inch sprig of fresh lemon thyme ( plus a little extra for garnishing )

6x leaves of fresh sage

1tbsp olive oil


METHOD


Dice the chicken into mouth sized chunks and put to one side. ( I like to get everything prepped before cooking )

Peel, crush and thinly slice the garlic or use a garlic crusher if you have one.

Grate both cheeses.

Tear the fresh herbs and slice the lime in half.

In a large frying pan add the oil and put on high heat.

Add the diced chicken and garlic and fry on a high heat for 5 minutes and stirring occasionally ensuring the chicken doesn't stick to the pan and is being thoroughly cooked.

Turn the heat to medium and add the salt and pepper and squeeze the juice of the lime over the chicken.

Cook for a further 5 minutes or until all pieces of the chicken are cooked.

Add the cream cheese and cream and mix everything together thoroughly.

Add the grated cheese and stir well.

Add the fresh sage and lemon thyme, stir and simmer on a low heat for approx 5-6 minutes or until all of the cheese has melted.

At this point the dish is ready, however if you're serving it with pasta then I'd suggest adding half a ladle of the starchy pasta water to make the sauce silky smooth.

Serve and garnish with some fresh lemon thyme and enjoy.
