Easy Extra Fluffy Pancakes

I'm sure you've seen videos and pictures online of super fluffy scrumptious looking pancakes and probably thought to yourself that you wanted to try making some, but then realised that the process was a little more complicated than regular pancakes. Luckily we found a solution that requires no fancy equipment or ingredients and is simply a slightly altered, regular pancake mixture. They taste oh so good and jiggle around a little when you move them and are super fluffy on the inside. Some measured to about an inch tall! Anyway, pair them with whichever toppings you desire (we chose bacon, cranberries and honey) and enjoy!


P.S a little secret just for you for creating thick fluffy pancakes - Lumpy! Not smooth batter. You want lumps, so don't use a hand blender or electric whisk to mix your batter. Just use a fork to beat the mixture...

INGREDIENTS


  • 600ml of milk

  • 400g of Organic plain flour

  • 1/4 cup of butter - melted

  • 1x large eggs

  • 2x heaped tbsp of caster sugar

  • 2x capfuls of vanilla extract

  • 2x heaped tsp of bicarbonate of soda

  • 1x heaped tsp of baking powder

  • pinch of salt


METHOD


Add all of the ingredients to a large mixing bowl and using a fork whisk together by hand until fully combined (you don't want a smooth batter, but instead a LUMPY batter).

Preheat your frying pan. Once heated add a dash of olive oil and heat on a medium heat.

Once heated turn to a low heat and add a small ladle of the mixture, spread gently to shape and fry.

Once air bubbles appear on the surface it's time to flip.

Cook for approx 30 - 45 seconds until the underside is golden (depends on the size of your pancakes).

Transfer to a plate and keep warm with foil whilst you repeat with all the remaining batter.

When ready, serve with your desired toppings and enjoy!
