Easy Lemon Curd

Everyone loves lemon curd and we bet you didn't realise just how easy it was to make too. Spread it over toast, have it in a tart, or layer it up with a limoncello tiramisù. However you like to have it, this recipe is the only lemon curd you'll need! So without further ado, let's get on with the recipe!

INGREDIENTS


  • 1x cup of caster sugar

  • 6x egg yolks

  • 1/2 cup of lemon juice

  • 2x tbsp of lemon zest

  • 1/2 cup of cold butter (cubed)


METHOD


Start by zesting the lemons.

Now slice them in half and squeeze all of the juice out of them until you have approx 1/2 cup (this may require multiple lemons).

Add the egg yolks to a saucepan and mix them a little, just enough for the yolks to break.

Now add in the sugar and mix together well until it's fully combined.

Begin to slowly add in the lemon juice, whilst still mixing, then add the lemon zest.

Start heating the saucepan on a low heat, making sure to continuously stir the lemon curd to ensure it doesn't stick.

After several minutes it should start to thicken and bubble a little (if you want it thicker, heat it for longer, or if you want it runnier, remove it from the heat earlier).

When this happens, remove it from the heat and add the butter, then mix it until it melts.

Now strain the curd through a sieve to remove unwanted bits of zest and give it a nice and smooth consistency (this can be difficult if your mixture is thick, forcing it through with the back of a spoon helps).

If desired, transfer the lemon curd to the fridge to set until you need it (note that this will thicken it up more), or use it right away, enjoy!

Lemon curd has to be one of my favourite preserves / curds (not quite sure what category it falls into 😂) Love it spread on top of buttery toast and its delicious in desserts. This recipe is super easy to follow and tastes lovely.
