Our Easy Overnight Carrot Cake Oats has all the delicious flavours you would expect from a carrot cake, making this a delicious and healthy breakfast option.
We also like to add in a scoop of plain protein powder into each serving, as we like to enjoy these overnight oats after our morning workout. Overnight oats are very easy, and are a super convenient way to get in a bit of protein after an early morning workout, especially if you have a busy morning ahead and no time for cooking.

INGREDIENTS
Makes 2 servings
Ingredients for overnight oat mixture
1 & 1/2 cups of Milk
1/2 cup of Natural Yoghurt
1x cup of Oats
1x small Carrot - grated and squeeze out the liquid
1/3 cup of Sultanas
2x level tbsp of Flaxseed
Handful of Chopped Walnuts
2x tbsp of Honey or Maplesyrup
1x heaped tsp of Cinnamon
1x heaped tsp of Ground Ginger
1x tsp of Nutmeg
2x capfuls of Vanilla Extract
Pinch of Sea Salt
Recommended serving portion of your favourite plain Protein Powder - optional
Optional Toppings
Dollop of Natural or Coconut Yoghurt
Sprinkling of crushed Walnuts
Few Sultanas
Drizzle of Honey or Maple syrup
METHOD
Simply add all of the ingredients into a glass measuring jug and mix until thoroughly combined. Evenly transfer the mixture to your serving jars, pop on a lid and store in the fridge overnight.
Eat as is, or add some of your favourite toppings such as; Berries, walnuts or yoghurt.
