Easy Sloppy Joe's - One-Pot Dinner

Sloppy Joe's is a fantastic one-pot family dinner. It's quick, easy to assemble and above all it tastes fantastic!

This is fantastic any day of the week and it's a great dinner that the kids can assemble themselves and add their own toppings.

We love to add some grated cheese, sliced cucumber and jalapeños. You can add what you fancy or keep it simple with just the meaty sauce. Either way it will taste delicious!

We like to serve ours in soft baps, but you could use crusty rolls or even a large tortilla wrap.

INGREDIENTS


  • 500g of Minced Meat - pork or beef

  • 2x large Leeks or 1x large Onion - finely diced

  • 1x large Red Bell Pepper - finely diced

  • 3x Cloves if Garlic - crushed & finely diced

  • 130g of Tomato Puree

  • Heaped tsp of Mustard

  • 1x tbsp of Ketchup

  • 1x tsp of Sweet Paprika

  • 1x tsp of Smoked Paprika

  • 1x tsp of Cumin

  • 1/2 tsp of Chilli Flakes

  • Heaped tbsp of Brown Sugar

  • 1/2 cup of Broth or Water

  • 1x tbsp of Worcestershire Sauce

  • 1x tbsp of Apple Cider Vinegar

  • Large pinch of Salt & Pepper

  • Olive Oil for cooking


Extras For Serving


  • Bread Rolls of your choice - we prefer soft baps

  • Grated Cheddar or Mozzarella

  • Salad of your choice


METHOD


Heat a large pan or skillet on a high heat and then add your oil.

Once your oil is hot add in your minced meat and fry until browned - be sure to stir occasionally to prevent sticking.

Once your meat has browned add in your garlic and leeks/onion. Mix together well and fry for a few minutes before adding in your salt, pepper, Paprika, Cumin and chilli flakes. Combine together well.

Turn to a medium heat and add in the bell pepper. Stir to get everything well coated on the herbs and spices.

Turn to a low heat and add the tomato puree, mustard, ketchup, vinegar, sugar and water and stir together well.

Turn the heat back up and bring to a simmer - reduce the heat when it's reached a simmer.

Stir occasionally to prevent sticking and simmer for 15 minutes.

Slice your rolls in half and then load it with your meaty sauce and any other toppings such as, grated cheese and salad.

Serve and enjoy!
