Making your own pastry really is easy and contains far healthier ingredients than the ready-made shop bought pastry. And if I'm honest it tastes far better too.
A little tip I'd like to share is to double the ingredients, line a tart tray and store it in the freezer until you fancy making a tart.

INGREDIENTS
Makes enough for a 25cm tart dish
1 1/2 cups of plain flour
pinch of salt
120g of cold butter
25g of caster sugar
1x egg yolk
zest of 1 lemon (optional)
cold water
METHOD
Add all of the ingredients to a large mixing bowl and rub the ingredients together between your fingertips until it resembles fine breadcrumbs.
using your hands work the dough into a ball. If it's too crumbly add a tsp of cold water. Add more if needed. Cover with cling-film and chill in the fridge for 30 minutes.
Lightly dust your worktop with some flour and roll-out with a rolling pin to your desired shape.
Bake as your recipe requires.
