Easy Vegan Greek Burgers

Trying to make that perfect veggie burger that holds its shape and doesn't turn to mush can be a challenge and so we're here to help. Our easy to make vegan-friendly veggie burgers are packed full of flavour and use simple ingredients. Besides the obvious of having them in a bun as a burger, they're also great to have with a variety of salads, such as quinoa salad, pasta salad and more. Their Greek name comes from the addition of fresh mint leaves and olives, sure to give your taste buds a FIESTA! So without further ado, here's the recipe!

INGREDIENTS

6 servings


  • 580g of canned chickpeas (drained)

  • 1 cup of oats

  • 1x small red onion

  • 1x large clove of garlic (roughly chopped)

  • 80g of olives (roughly chopped)

  • 1x tsp of chilli paste

  • 2x tsp of fennel seeds (roughly crushed)

  • large pinch of salt & pepper

  • 6x large leaves of fresh mint (roughly torn)

  • 1x lemon (juice only)

  • 1x tbsp of olive oil


METHOD


Start by putting all the ingredients into a food processor, besides the oats, olives and fresh mint.

Blitz until everything has been well mixed, but NOT formed a paste. You don't want the mixture to become a paste, you still want a slight bit of texture, but also not too chunky (if the mixture becomes too wet, the burgers will have less chance of holding their shape whilst cooking).

Transfer to a large mixing bowl and add the oats, fresh mint and olives and combine the ingredients together well.

Divide the mixture into six equal burgers.

Drizzle the olive oil into your non-stick frying pan and preheat on a high heat before adding your burgers.

Cook for 4 - 5 minutes on each side or until golden and slightly crispy on the outside.

Serve as desired and enjoy!
