Egg & Avocado Smash - (grain-free & gluten-free)

Who needs toast when the star of the show is the egg & avocado...

This is a great recipe for breakfast, brunch or lunch and it is SO simple & quick.

A nutritious healthy breakfast recipe that is Gluten-free & Grain-free & suitable for the Paleo Diet.


The flavours are fresh & zingy with a little kick of spice and we absolutely LOVE it!

INGREDIENTS


  • 1x Ripe Avocado or 1/2 a Quintal Avocado

  • 1 - 2 Eggs

  • Large handful of Sprouted Greens or Micro Greens or Spinach

  • Handful of Cherry Tomatoes - halved

  • Pinch of Sea Salt

  • Pinch of Black Pepper

  • Juice of 1/2 a Lime

  • Few dashes of your favourite Hot Sauce or Sweet Chilli Sauce


METHOD


Remove the pit from your Avocado and using a spoon scoop out the flesh into a bowl.

Using a fork smash the avocado until you get your desired consistency. I like mine with small chunks.

Now add your seasoning, mix together and put to one side.

Now heat up a small frying pan, add a little oil and then fry your egg or eggs. I like a runny yolk so I do not flip.

White the eggs are cooking go ahead and assemble your serving bowl.

Add the Smashed Avocado to the bowl and roughly smooth out. Add a little squeeze of Lime Juice along with a drizzle of your favourite Hot Sauce.

Top with a handful of Sprouted Greens, or Micro Greens, or spinach and squeeze with the remaining Lime juice.

Place some halved cherry tomatoes around the edges.

Top with your fried Egg and serve with a little sprinkling of black pepper and a little more Hot Sauce if you wish - Enjoy!
