We love a good brownie recipe, especially an extra fudgy brownie recipe.
Not only is this brownie recipe extra chocolatey and fudg, you also have the added deliciousness of the caramel layer. The caramel is sandwiched between two squares of the amazing chocolate brownie, making it a perfect comforting, and indulgent treat - it's SO GOOD!
They're fudgy, nutty and oozing with melted chocolate, and caramel, and are sure to be a treat that everyone will love.
We used doce de leite instead of caramel, but caramel made for a far shorter title 😁, however caramel would make a delicious alternative.
Perfect on a cool and cosy sunday afternoon, with a nice cup of your favourite tea or coffee.

INGREDIENTS
Makes 6 brownie sandwiches
For The Brownies
3/4 cup of Plain Flour
2x 1/3 cups of cocoa powder - sieved
3/4 cup of Honey
2x eggs
pinch of salt
2x capfuls of vanilla extract
150g bar of Milk Chocolate with Peanuts - broken into smallish chunks
1/2 cup of olive oil
2x tbsp of water
For The Filling
Approximately 1 heaped tbsp of Doce de Leite or Caramel Spread
METHOD
Preheat the oven to 180C and line your baking tray - 27 x 19cm
In a large mixing bowl add the flour, cocoa powder and salt and mix together using a spoon.
Now add your jumbo chocolate buttons and walnuts and fold through.
In a separate mixing bowl add the eggs, vanilla, honey, oil and water and whisk together by hand.
Now add the wet mixture to the dry mixture and mix together until fully combined.
Transfer to a lined baking dish and evenly spread.
Bake on the top shelf of a well preheated oven for 20 minutes or until a toothpick comes out clean.
( Everyone's ovens vary and you don't want to over cook it, as it will loose it's fudginess and remember, it will continue to cook as it cools down. )
Remove from the oven and allow to cool slightly, until it's cool enough to handle.
Cut into 12 equal sized squares and then add a tsp dollop of the doce de leite / caramel spread to 6 of them and spread. Top each one with a plain brownie and sandwich together.
Serve warm so the chocolate stays gooey and the caramel oozes slightly over the edges.
