Frozen Oat Peanut butter Cups

Everyone loves Reese's peanut butter cups, but they aren't exactly the healthiest choice out there. So if you're wanting to eat healthier and simply want to create a healthy alternative, then look no further. These amazing Frozen Oat Peanut Butter Cups are an incredible substitute to the real thing. They're a make ahead recipe, perfect for if you want to make up a bunch of healthy sweet treats to snack on throughout the week. They are perfect for meal-prep.


The base is a mixture of oats and honey, topped with a layer of peanut butter, covered in melted dark chocolate, then topped with a sprinkling of sea salt flakes.

We truly can't stress enough just how good these are, and are sure they will become a staple in your kitchen.

So without further ado, let's get on with the recipe.

INGREDIENTS

Makes 8 cupcakes


  • 1x cup of Oats

  • 2x tbsp of Runny Honey or Maple Syrup

  • Approx 1/2 cup of Crunchy Peanut Butter or Nut Butter of your choice

  • 120g of Dark Chocolate - melted

  • Pinch of Sea Salt Flakes


METHOD


In a bowl add the oats and Honey and mix with a spoon until fully combined.

Evenly divide the mixture between 8 cupcake holders (we use silicone). Press down with the back of a spoon.

Top each one with a heaped tsp of Peanut butter and smooth out.

Pop into the freezer for 30 minutes.


In the meantime melt your dark chocolate over a bain-marie, or in a microwave.

Once the chocolate has fully melted allow to cool.


Once your chocolate has cooled, but is still Runny, remove your bases from the freezer.

Now evenly top your oat and peanut butter bases with a layer of melted chocolate.

Smooth the chocolate out with the back of a teaspoon.

Sprinkle each one with a few Sea Salt Flakes, and pop back in the freezer to fully set.


Simply remove from the cupcake case, and enjoy. Just allow it to soften for a few minutes before
