Fudgy White Choc & Strawberry Brownies

Looking for an extra fudgy brownie with a slight twist?

If the answer is a definite YES! then this is the recipe for you...

This brownie is fudgy and loaded with white chocolate chunks and strawberries.

The strawberries in this brownie are the star of the show. As they bake in the oven they release their sweet sugars which bake into the brownie around them, creating a jam consistency - SO SO GOOD!

They are fudgy and moist and when you bite into the baked strawberry it explodes in your mouth and the flavour is AMAZING!

This recipe is simple and quick and we absolutely adore them - we really hope you do to.

INGREDIENTS

Makes approx 10 large slices


  • 1/4 cup of Muscovada Sugar (be sure to break-up any clumps in the sugar)

  • 1 & 1/4 cups of White Caster Sugar

  • 1/2 cup of Icing Sugar sugar - sieved

  • 2/3 cup of Cocoa Powder - sieved

  • 3/4 cup of Plain Flour

  • 2x Eggs

  • pinch of Sea Salt

  • 2x capfuls of Vanilla Extract

  • 180g of Chocolate - broken into squares (can use white, milk or dark)

  • 1/2 cup of Olive Oil

  • 2x tbsp of Water

  • approx 10 fresh Strawberries ( 1 for each slice )


METHOD


Preheat the oven to 180C and line your baking tray - 30x20 cm


In a large mixing bowl add the flour, sugars, cocoa powder and salt and mix together using a spoon.

Now add your squares of chocolate and fold through.


Now add in the eggs, vanilla, oil and water and mix together by hand, until fully combined.


Transfer to a lined baking dish and evenly spread.

Remove the head of the strawberry and place one strawberry per square slice of the brownie (we went with 10, but if you want smaller slices then add more strawberries)

Bake on the top shelf of a well preheated oven for 40 minutes or until a toothpick comes out clean.

( You don't want to over cook it, as it will loose it's fudginess and remember it will continue to cook as it cools down. )

Remove from the oven and allow to cool completely in its tray.

Once cooled remove from the dish and slice into your desired size pieces.

Serve and enjoy!
