Grain-Free Fruit & Nut Banana Bread

Going grain free usually means saying bye to all of your favourite breads and cakes, but thankfully banana bread is very simple and easy to make without regular flour, you just need some cassava flour and almond flour. It's full of walnuts, sultanas and infused with peanut butter. The layer of peanut butter through the center of the banana is a nice little surprise.

We find that it's best to make it at night and serve it the next morning, as it'll be moister and more flavourful, although it still tastes great served warm straight from the oven. Just transfer it straight from the oven, to a glass airtight container and leave it out until the next day, but don't put it in the fridge as it'll dry out. We also love to serve it with a dollop of coconut yoghurt and a drizzle of honey, but you can serve it with whatever you like. Anyway without further ado, let's get on with the recipe!

INGREDIENTS

Approx 10 - 12 servings


  • 2x cups of almond flour

  • 1/2x cup of cassava flour

  • 1x tsp of baking soda

  • 1x pinch of salt

  • 1x heaped tsp of ground cinnamon

  • 3x eggs

  • 2x large very ripe bananas (mashed)

  • 1 & 1/2x cups of milk

  • 1x cup of sultanas

  • 1/2x cup of roughly chopped walnuts

  • 2x capfuls of vanilla extract

  • 1x heaped tbsp of honey - plus extra for topping (1x heaped tsp)

  • 1x handful of pumpkin seeds - for topping

  • 2x tbsp of room temperature peanut butter (or any nut butter)


METHOD


Preheat the oven to 180C

Start by adding the flours, baking soda, salt and cinnamon to a large mixing bowl and mix together well with a spoon.

Then add the eggs, milk, vanilla extract and honey and mix together again.

Now add the banana, sultanas and walnuts and fold them through the mixture.

Add half of the mixture to a loaf tray, then make a channel of peanut butter through the centre of the mixture, then add the remaining mixture on top of that.

Sprinkle the pumpkin seeds on top of the banana bread and drizzle with a little more honey, then transfer it to the oven and bake for 45 minutes.

Remove from the oven and enjoy warm or transfer to a glass airtight container (while it's warm) and serve the next day with your desired toppings - Enjoy!

A real hearty banana bread and packed full of fruit and nut. The added centre of peanutbutter is really good.
