Halloween Movie Night Toffee Honeycomb

Updated: Oct 21, 2023

Honeycomb is delicious on its own, or with cupcakes, cheesecakes and more. It's quite hard to get right, but don't worry, we'll explain everything in detail. Having all your equipment and ingredients ready is an absolute MUST because you need to work fast with honeycomb or else it will stick to the pan and fail! Unlike normal honeycomb, ours has a slight toffee like consistency, as it has a stickier & chewier texture - it's SO GOOD!

The honeycomb can be made up a day or two in advance, just make sure to keep it in the fridge. We like to decorate ours with melted chocolate, salted popcorn and orange and green chocolate coated candy (such as smarties or m & m's). Halloween themed marshmallows are also a great way to decorate it.

We also sometimes like to have it with salted pretzels. Honeycomb is also great to cut up into small bite-sized pieces and snack on during a film. So without further ado, lets get on with our delicious Halloween movie night toffee honeycomb recipe!

Happy Cooking!

INGREDIENTS

For the honeycomb

  • 1 & 1/4 cups of caster sugar

  • 3/4 cup of honey (or golden syrup if vegan)

  • 1 tbsp of bicarbonate of soda (it must be sieved)

  • 1 tsp of vanilla extract

  • pinch of salt

For the toppings

  • Approx 100g of melted milk or dark chocolate (or vegan chocolate)

  • handful of candy

  • large handful of popcorn

(add as much toppings as you like)

METHOD

You need to move quick with this recipe, so prepare and weigh out all of your ingredients beforehand and line your tray (we find it easier using silicone sheets).

In a medium sized saucepan add the sugar, honey, vanilla and salt and cook on a medium - high heat for approx 4 - 5 minutes or until it starts turning an amber colour - keep stirring the whole time to ensure it doesn't stick to or burn the pan.

Once it reaches an amber colour remove from the heat and add in your sieved bicarbonate of soda and quickly stir with a silicone spatula until the bicarbonate of soda has fully dissolved. Work fast because the mixture will largely grow in size and transfer immediately to your lined tray.

Leave to fully cool and harden before decorating with the melted chocolate.

Go ahead and add your popcorn and candy and allow to cool in the fridge until the chocolate has hardened.

Transfer to a chopping board and cut into your desired sized pieces - enjoy!

The honeycomb should last for 3 - 4 days in an airtight container in the fridge
