Healthy Frozen Oat Cheesecake Cups

When the urge to snack strikes, we usually end up rummaging through our cupboards in search of a can of Pringles or a tin of biscuits, which isn't exactly good when you're trying to eat healthily. One of the best ways to stay on track while eating healthily is to food-prep, and make up a bunch of healthy snacks that'll last the week, or to keep in the freezer to satisfy your sweet tooth. These Frozen Oat Cheesecake Cups are perfect for when you're in the mood for, well, cheesecake!


They're so simple and easy to make and only require a few basic ingredients. The base is a mixture of banana, oats and honey and then the 'cheesecake' filling is made up of yoghurt, cottage cheese (or homemade kefir) and berries. It really is so so good and it's already become a regular in our kitchen. So without further ado, let's get on with the recipe!

INGREDIENTS

Makes 8 cupcakes


  • 2x ripe Bananas

  • 1x cup of Oats

  • 1/4 cup of Runny Honey

  • 1 & 1/2 cups of Natural Yoghurt

  • 2x tbsp of Sieved Cottage Cheese, or Home-made Kefir

  • Handful of Frozen Berries


METHOD


In a bowl peel and mash your bananas using the back of a fork.

Add in your oats and honey. Thoroughly mix together.

Equally divide the mixture between your 8 cupcake holders, and press down with the back of a teaspoon.

Pop into the freezer for 30 minutes to firm up.


In the meantime add your Yoghurt, and sieved Cottage Cheese, or thick Home-made Kefir to a bowl. Add in the frozen berries and mix together.


Once your bases have firmed up, equally divide the yoghurt mixture between the 8 cupcake cases.

Top each one with a Frozen Berry, or slice of fresh strawberry (keep it visible above the yoghurt), and pop back in the freezer to fully set.


Once fully set they're ready to eat.

Just remove from the cupcake holder, and allow to soften for a few minutes before enjoying.
