High Protein Tortilla Quiche

This recipe is a new family favourite for either breakfast or lunch.

It's super easy and comes together in no time. This is our take, on a healthier version of a quiche, and is loaded with fresh veggies, and a good amount of protein.

We love to include protein into our meals, especially for breakfast after a morning workout, and this recipe is a fantastic natural way of doing so. Apart from 5 eggs, this recipe also includes cottage cheese, which is another good source of protein. We'd much rather prefer natural protein, over consuming protein powder, if we can.

What we love about this recipe is, just how customisable it is. The filling can be adjusted to, mood, season or diet, and personally we love recipes like that.


We used 5 tortillas to make this quiche. However, if you have extra large tortillas you can line your oven dish with just 1. Just be sure that your tortilla creates a decent size edge, otherwise your egg filling will overflow.

INGREDIENTS


  • 5x small Flour Tortillas or 1 extra large

  • 5x Eggs

  • 2x tbsp of Cottage Cheese or Home-made thick Kefir

  • Handful of grated Cheddar Cheese

  • Handful of Cherry Tomatoes - halved

  • Handful of Green Onions or Chives - finely chopped

  • Handful of Sliced Mushrooms

  • Dash of Milk

  • Pinch of Sea Salt

  • Pinch of Cracked Black Pepper

  • 1x tsp of dried Oregano


METHOD


Preheat oven to 200C


Line a quiche, or oven circular dish that has a lip with your tortilla wraps. Ensure the base and sides of the dish are covered with the tortillas.

Add your eggs, dash of milk, and cottage cheese, or homemade thick kefir to a measuring jug, and whisk with a fork.

Pour the egg mixture into your tortilla lined dish.

Top with the mushrooms, tomatoes, green onions, cheese and seasoning.

Place into your preheated oven and bake for 30 minutes, or until the egg mixture has risen and fully set.

Remove from the oven, slice and enjoy.
