INGREDIENTS

Makes approx 1x cup

  • 1x cup of caster sugar

  • 1/4 cup of water

  • 6x tbsp of butter (cut into pieces)

  • 1/2 a cup of heavy cream

  • 1x tsp of vanilla extract

  • small pinch of salt

METHOD

Add the sugar and water to a heavy based saucepan. Bring to the boil on medium heat.

Continuously stir the mixture, otherwise it will stick to the pan.

After about 3-4 minutes, the sugar should dissolve and the mixture should be clear and bubbling. If it is still cloudy, just give it a little longer.

Once the mixture is clear and bubbling, stop stirring and instead swirl the saucepan, but make sure to scrape any sugar off the sides of the saucepan.

After around 8-12 minutes, the sugar will eventually form clumps and the mixture should thicken and turn a deep amber colour.

Once this happens, add the butter and mix together until it has melted.

Now remove the saucepan from the heat and pour in the heavy cream. Mix together until it has been fully incorporated.

Add in the vanilla and salt and mix again.

Finally, pour the mixture into a serving jug and enjoy!

Should keep for at least a week in an airtight container in the fridge. This will however make it thicken up and will require reheating
