Hot & Cold Quinoa Bowl

We are absolutely in love with this recipe.

It's simple, fuss-free and ready in only 20-30 minutes.

This little bowl of hot & cold is full of healthy & nutritious goodness and makes for a delicious lunch, dinner or side.

Quinoa is great, especially if your avoiding grains or gluten and are missing the texture of grains in your meals.

Some may think that Quinoa is a grain, however infact it is not. Quinoa is actually a seed. It comes from the Chenopodium Quinoa Plant and it contains all 9 essential amino acids that our bodies can not make by themselves. It is also high in protein.

Quinoa is a great substitute for grains and we love it.

The combination of the hot quinoa & veggies with the cold Sun-dried Tomatoes, walnuts & Parmesan is so good. So many fresh flavours that your taste buds are sure to have a FIESTA!

INGREDIENTS

Serves 3-4 as a main or more as a side


  • 2x cups of Quinoa

  • 2x cups of Water

  • 1x large Red Onion finely diced

  • 1x large Courgette

  • 3x large pinches of Sea Salt

  • 3x large pinches of Black Pepper

  • 2x heaped tsp of Sweet Paprika

  • 3x heaped tsp of Dried Parsley

  • 1x tbsp of Italian Mixed Herbs

  • 1 - 2 x heaped tsp of Chilli Garlic Paste

  • 1x Lime - juice only

  • 1x cup of Sun-dried Tomatoes - roughly chopped

  • 1x cup of Walnuts - roughly chopped

  • 1x cup of Parmesan (could use vegan option) - finely grated

  • Approximately 2x tbsp of Olive Oil for drizzling


METHOD


Start by boiling your water in the kettle.

Add your Quinoa to a sieve and rinse with fresh water before adding it to a medium sized saucepan.

Cover with the boiling water and bring to a light simmer & cook on a low heat for 15 minutes - stirring occasionally.

Once cooked fluff up with a fork, cover and leave for 10 minutes. (Perfect time to cook your prepped veggies)


Add your diced veggies to a large mixing bowl andvthen add all of the dried herbs & seasonings. Using a spoon or your hands, toss the veggies coating them thoroughly in the herbs.


Add a good drizzle of Olive Oil or Avocado Oil to a large frying pan and heat on a high before adding your seasoned veggies.


Cook on a medium heat for a few minutes before adding the chilli & garlic paste and the juice of 1 lime. Mix together & cook for approximately 5 minutes or until soft.

Fluff up your Quinoa with a fork and then transfer it to the cooked veggies. Evenly combine together.


Time to bowl up.


Add the Quinoa & veggies to your bowls and then top with the chopped Sun-dried Tomatoes, chopped walnuts, parmesan cheese & a good drizzle of olive oil.


Serve & Enjoy!
