Italian Herbed Cauliflower Rice

I can't believe that it took me so long to try this...

IT'S DELICIOUS!

I've seen cauliflower rice pop up loads on social media and food sites, however I just never saw the point of it, especially when I enjoyed real rice so much...

Don't get me wrong, I love cauliflower, but usually smothered in lots of delicious cheesy sauce...

Any how, after recently switching over to a keto / low carb diet I really craved rice and so, I succumbed to the idea of cauliflower rice...

So off to the shop I went and came back with a huge head of cauliflower and put my food processor to work.

I tried it plain and raw, however I was not a fan and ended up tossing it all into a pan and creating this delicious and super quick cauliflower rice recipe...


Obviously cauliflower rice is great as a side dish, especially when you're having a curry, however it's also amazing mixed in with fresh salads and as a tasty oriental chicken fried rice dish...



So lets get into this new recipe...

INGREDIENTS


1x large cauliflower

2 tbsp olive oil

2x large cloves of garlic

2 tsp mixed Italian herbs

large pinch of sea salt

large pinch of black pepper

1x lime ( juice only )


METHOD


Cut the cauliflower into pieces. You can use all of the heads and stems - just discard the end base and any leaves.

Depending on the size of your food processor it is best to do this next step in stages.

Add small amounts of the cauliflower to the food processor, close the lid and pulse for a few seconds. Be sure not to over pulse or it will start to form a paste. You are after a fine crumbly consistency.

Empty your food processor and repeat the above step until all of the cauliflower is used.

Peel your garlic cloves and either crush in a garlic crusher or crush and finely chop with a knife.

In a large frying pan add the oil and turn to a high heat.

Add the crushed garlic and fry for 1 minute.

Add all of the seasoning and mix with a spatula.

Turn to a medium heat and add the cauliflower rice. Mix together well ensuring all of the cauliflower is well coated with the seasonings.

Fry all together for a couple of minutes or until the cauliflower is nice and hot.

Remove from the heat and transfer to your serving bowl or plate and squeeze fresh lime juice over the top and enjoy.
