Keto Lasagna Sheets

Oh isn't it just the worst thing when you switch to a low carb diet and all of a sudden all your favourite dishes become a thing of the past... Lasagna was always a firm favourite of ours and after switching to a keto diet, it seemed an impossibility to ever have one again. That is until we discovered these easy to make keto lasagna sheets that require no crazy or special ingredients and taste even better than the real thing... Just be sure to have a lot of cheese on hand because that's the fundamental ingredient for this recipe. Unfortunately the recipe cannot be substituted to be vegan, as egg is a necessary ingredient. It is however also completely gluten and grain-free and vegetarian. You can make up the lasagna sheets in advance for your meal on the same day too. We recommend doing this, as it just helps speed everything up, as the sheets take around 35 - 40 minutes to make, plus 20 minutes of chilling time. So without any further ado, here is our delicious keto lasagna sheets recipe!

INGREDIENTS

serves approx 6


3 3/4 cup of grated mozzarella cheese

6 eggs

3/4 cup of grated parmesan cheese

340g of cream cheese

3 tsp of Worcestershire Sauce

1 tsp of mustard

season with salt & pepper and italian seasoning to taste


METHOD


Pre heat the oven to 190 C

Add the eggs and cream cheese to a mixing bowl. Mix together well with an electric mixer.

Once fully combined, add in the parmesan cheese, all of the seasoning, mustard and Worcestershire Sauce. Mix well again.

When finished, fold in all of the mozzarella cheese until fully incorporated.

Now, line two approx 30 x 20cm baking dishes with silicone sheets or parchment paper.

Evenly distribute the mixture between the two baking dishes.

Bake in the oven for around 25 minutes.

Remove from the oven. It is normal for the lasagna sheets to seem undercooked, they will firm up.

Now place them into the fridge for around 20 minutes, or until you're ready to use them.

When you're ready, slice the sheets into the required sizes for your baking dish if needed.
