Lemon, Pepper & Parmesan Chicken Pasta

Everyone enjoys a good bowl of pasta and this recipe will not disappoint.

It's quick, simple and packed full of fresh flavour.

This is great for when you have guests or for a weekend treat at dinner time - my lot love it.

The sauce is very similar to a Carbonara, except it has 1 extra ingredient - lemon.

The lemon really does add so much flavour and zesty freshness to this creamy cheese sauce.

WE LOVE IT!

Top it with some fresh slices of parmesan cheese and fresh cracked pepper. You could also pair it together with some garlic bread or a warm slice of focaccia with rosemary, drizzled in olive oil. The flavours are sure to give your taste buds a FIESTA! So without any further ado, here is our lemon, pepper and parmesan chicken pasta recipe!

INGREDIENTS

3 generous servings


  • 2 large chicken breasts ( diced into bite size pieces )

  • 1 compacted cup of grated parmesan ( plus extra for serving )

  • 1 cup of grated cheddar ( we like a strong cheddar )

  • large pinch of sea salt

  • large pinch of crushed black pepper ( plus extra for topping )

  • zest of 1 lemon

  • juice of 1 lemon

  • 3 egg yolks

  • 1 ladle of pasta water

  • 2 tbsp of thick cream

  • 500g of linguine ( we used gluten free )


METHOD


Bring a large pan of boiling water to the boil and add the pasta along with a pinch of salt and cook your pasta as instructed on the packet.


Add some olive oil to a large frying pan and add the diced chicken, salt and pepper and cook on a medium high heat until fully cooked. This usually takes approx 7 minutes, however it will depend on the size of your chunks.


In a large mixing bowl add the cheese, cream, egg yolks, lemon juice and lemon zest and whisk together with a fork. Once the pasta is cooked add a ladle of pasta water and mix together well.


Drain the cooked pasta and add to your cooked chicken and add the sauce. Mix together on a low heat until the cheese has melted. If the sauce is too thick for your liking then add a dash more water.


Plate up in your favourite pasta bowl and top with some shavings of parmesan and some crushed black pepper - Enjoy!
