Marbled Sugar Cookies

Sugar cookies are fun, easy and tasty and these are no exception. They look great too and require little effort to pull off, just make sure you've got some festive colours of food colouring. The icing for these cookies works really well and sets fast, ensuring you don't have to wait around for ages for them to harden. They're great for any festive occasion where everyone will enjoy them, so without further ado, let's get on with the recipe!

INGREDIENTS


For the cookie dough


  • 250g of butter (room temperature)

  • 195g of caster sugar

  • 420g of plain flour (plus extra for decorating)

  • 1x egg

  • 1x tsp of vanilla extract


For the marbled icing


  • 3x cups of sieved icing sugar

  • 6x tbsp of full-fat milk

  • 1x tsp of vanilla extract

  • food colouring of your desired colours (we used red and green)


METHOD


For the cookie dough


Preheat the oven to 200C

Start by beating together the butter and sugar in a mixing bowl until creamy.

Then add the egg and vanilla and beat again until smooth.

Add the flour and beat once more until it's all combined.


Roll out the dough on a lightly dusted surface until it is about 3/4 cm in thickness and cut out your desired shapes (we chose stars).

Transfer them all to your lined baking tray, pop onto the top shelf of the oven and bake for 10 - 12 minutes or until they start to go golden on the edges.

Remove from the oven, set aside to cool and begin making your icing.


For the marbled icing


Add the milk, vanilla extract and icing sugar to a mixing bowl and mix together thoroughly.

Divide equally into three bowls and add your desired food colourings to two of the bowls and leave the third white.


Drizzle a tiny amount of the coloured icing into the white icing and then using a toothpick swirl the colours together (but don't overdo it), to create your pattern.

Take a cookie and dip it face-down into the icing carefully, making sure to lift and tilt to the side slightly so the excess drips off.

You'll have to add more of the coloured icing to the white icing to create your pattern again.

Once all of the cookies have been covered in the icing, set them aside to cool (they take about 1 - 2 hours to harden fully, or just eat them immediately).
