Moistest Choc 'N' Nut Banana Bread Slices - Gluten-Free

This banana bread recipe is one of the BEST banana breads we've ever made or tasted.

It's super moist, super light and super easy.

This banana bread is gluten-free as it is made from almond flour, which is amazing in cakes.

It's packed with whole walnuts, giant chocolate buttons and super ripe and sweet bananas - it's SO SO GOOD!

The sugars from the very ripe bananas bake into the chocolate buttons and caramelise - AMAZING!

This recipe is great to make and bake the night before so you have a delicious breakfast the following morning - such a treat.

An amazing treat to eat for breakfast, snack or dessert and we seriously LOVE it!

The combination of the nuts, chocolate and banana are incredible and it creates a really delicious treat, perfect for meal~prep.

INGREDIENTS

Approx 10 - 15 servings


  • 2 & 1/2 cups of almond flour

  • 1x tsp of baking soda

  • 1x pinch of salt

  • 3x eggs

  • 4x small very ripe bananas (mashed)

  • 1 & 1/2 cups of milk

  • 1/3 cup of olive oil

  • 80g of walnuts (whole)

  • 100g of giant chocolate buttons (plus extra for topping)

  • 2x capfuls of vanilla extract

  • 1x heaped tbsp of honey


METHOD


Preheat the oven to 180C and line a baking dish


Start by mashing the extra ripe bananas in a large mixing bowl.

Add the almond flour, baking soda and salt and mix together well with a spoon.


Then add the eggs, milk, vanilla extract, honey and oil and mix together again.


Now add the walnuts and giant chocolate buttons and fold it through the batter.

Add the mixture to your lined dish, then make sure all the walnuts and chocolate buttons are evenly distributed.

Transfer to the top shelf of the oven and bake for 45 minutes.


Remove from the oven and then add the giant chocolate buttons to the top. We like to add one to each portion. Add while the cake is fresh out of the oven so the buttons melt slightly.

We let the banana bread sit on the dish for 15-20 minutes before slicing, serving and enjoying...

Store in a glass airtight container (while it's warm) and serve the next day for breakfast - delicious 😋
