Naturally Sweetened Mango & Cherry Cream Whip

When it's hot and sunny, sometimes all you want is a light, refreshing and healthy treat. That's where our mango & cherry cream whip comes in handy. It's packed full of incredible flavours such as cherry, coconut and mango, it's egg and gelatin free and so so simple to make!

As this is a sugar free recipe, you could always use a natural sweetener like honey or maple syrup if you'd prefer it a little sweeter, but personally, I think it's sweet enough on its own and I don't think it needs it.

Serve it alongside something else, or simply eat it on its own - it's delicious either way. These are fridge desserts, making them fantastic for meal-prep. (as long as the cream is well within date & fresh)

INGREDIENTS

Makes 3 large servings or 6 small servings


  • 2x cups of double cream

  • 1x cup of coconut yoghurt

  • 1x large mango (pureed)

  • 100g of fresh cherries de-seeded (could use jarred cherries also)

  • a capful of vanilla extract (optional)

  • a dash of cherry brandy (optional)


METHOD


Start by adding the cream and yoghurt to a mixing bowl and mix together well until soft peaks form.

Slice your mango and puree it in a food processor (unless your puree is already made), then fold it through the cream mixture.

Now add your cherries to a food processor (make sure to remove the seeds) and blitz them up until they are just tiny little chunks and then fold them through the cream.

Finally, add your brandy and vanilla extract if using, then transfer the mixture to your serving dishes.

Place them in the fridge for at least 3 hours and then they should be set and ready.

Serve and enjoy!

such a simple recipe, and it tastes fantastic. light and creamy and perfect for a summer dessert.
