No Bean Chilli

Craving a Chilli, but trying to avoid beans?

Don't worry, we've got you covered. Yes, beans are traditionally a key ingredient in a chilli, however in our opinion you don't need them to enjoy the full flavour of Chilli.

We're breaking the rules and going bean-free...

It makes our Tummy a lot Happier.

This recipe is jammed packed full of delicious flavours and is a great family dinner recipe. It's also great as it's all cooked in one pot, which means less washing up - that always makes us Happy!

We love our No Bean Chilli served on top a bed of homemade Sweet Potato Fries and then topped with chopped Green Onions & a generous helping of our absolute favourite, Avocado & Lime Crema - The combination is AMAZING!

A healthy, delicious and comforting recipe perfect for the cooler weather, or anytime you fancy a bit of warming spice.

Also a fantastic recipe for meal-prep.

INGREDIENTS


  • 500g of Pork Mince (use any mince meat you like)

  • 1x large Courgette - diced

  • 225g of jarred Roasted Red Peppers

  • 1x large Onion - diced

  • 3x large cloves of Garlic

  • 2x tsp of Black Pepper

  • 3x large pinches of Sea Salt

  • 2x heaped tsp of Cumin

  • 1x heaped tsp of Ground Ginger

  • 1x heaped tsp of Smoked & Sweet Paprika

  • 1-2 tsp of Dried Chilli Flakes (depending on your taste)

  • 3x Bay Leaves

  • 2x tbsp of Worcestershire Sauce

  • 2x tbsp of Gluten-free Soy Sauce

  • 8 - 10 dashes of Tabasco

  • 135g of Tomato Puree

  • 1x cup of Water

  • Large handful of roughly chopped Spring Leaves or Chives


METHOD


In a large frying pan or skillet add 1-2 tbsp of Olive Oil and heat on high before adding your mince meat.

Cook the meat until browned, occasionally & then turn to a medium heat and add your onion & garlic.

Stir together and cook for a few minutes before adding your Salt, Pepper, Cumin, Ginger, Smoked & Sweet Paprika, Chilli Flakes & Bay Leaves.

Mix through the spices thoroughly and then add your diced Courgette, Tomato Puree & Water.

Turn to a low heat and allow to simmer for 10 minutes before adding your Chopped Jared Peppers & Tobacco Sauce (be sure to stir occasionallyto prevent sticking).

Mix together well and then continue to simmer for a further 10 minutes.

Feel free to add a dash more water if it becomes too dry.

When cooked top with the chopped onion greens or chives, serve and Enjoy!


We like to serve ours with home-baked Sweet Potato Wedges and a generous drizzle of our Avocado and Lime Crema - it's SO GOOD!
