Updated: Apr 15

Who else is nuts about peanut butter?

I'm assuming the answers, YES! After all you are checking out this post...

Hey! How you doin' ?

Peanut butter is delicious and is AMAZING with SO many things;

  • Peanut butter on hot buttery toast

  • Chicken & satay sauce

  • Apple chunks dipped in peanut butter

  • Peanut butter & jelly sandwich

  • Peanut butter ice-cream

The list is endless and at this point my mouth is salivating...

Cor! Peanut butter ice-cream...

In our household we are all Peanut butter lovers and it can get a little pricey with the amount we get through and so we decided to give it a go making it ourselves & where we are living the cost is a lot lower than buying it from the store, plus we know exactly what's going into it...

Perfect!

This recipe is my youngest child's recipe and is chief Peanut butter maker...

In this recipe there is only 2 ingredients and will take roughly 5 minutes to make, depending on the consistency you like... Are you team crunchy or team smooth?

Team SMOOTH here...

So without further ado let's jump into the recipe

INGREDIENTS

makes approx 345g

3 cups of unsalted roasted peanuts

1/8 cup of olive oil

METHOD

Place the nuts into a food processor and blitz for roughly 5-6 minutes.

While it's blitzing go ahead and add the olive oil.

If the peanuts are sticking to the sides - turn off the processor and scrape from the sides using a spatula.

Don't panic it wont stay crumbly - eventually it will turn into smooth peanut butter.

Once it starts to form a butter it is now your choice whether you continue to blitz or to stop - it depends if you want SMOOTH or CRUNCHY peanut butter.

Remove from the processor and serve or place it in an airtight container and store in the fridge. It should last for up to 2 weeks, personally it never lasts more than a few days in our house.
