One-Pot Cheesey Chicken & Leek Pasta

A delicious one-point family dinner.

Extra creamy, extra cheesey and a definite dinner time pleaser.


One pot dinners are popular in our household. They're fuss-free, simple and packed full of flavour.


A great plus side to one pot meals is, less washing up - which we're always a fan of.


This recipe is like a bulked up, Mac 'n' Cheese. Macaroni Cheese loaded with chicken, leeks and mushrooms - all of which are a fabulous combination.

INGREDIENTS

Serves 4-5


  • 500g of fusilli or your favourite pasta

  • 5 - 6x Chicken Breasts - diced into mouth sized pieces

  • 3x Leeks - finely sliced

  • 250g of Button Mushrooms - finely sliced

  • 2tbsp of butter

  • Dash of olive oil

  • 3x cloves of crushed garlic

  • 1tbsp of fresh thyme leaves

  • 2x large pinches of salt & pepper

  • 2x tsp of sweet paprika

  • 2x tsp of Garlic Powder

  • 80g of grated parmesan

  • 100g of grated strong cheddar

  • 80g of cream cheese

  • 1x cup of full fat milk

  • 6x cups of water


METHOD


In a large saucepan add the butter and olive oil and melt on a medium high heat.


Add the diced chicken and cook for 7 minutes or until cooked.

Add the garlic & leeks and all of the fresh & dried herbs & seasoning and mix together. Fry for 2 minutes stirring occasionally.

Now add in the mushrooms, combine together well and cook for 2-3 minutes.


Turn off the heat and add the dried pasta. Mix together well ensuring the pasta is well coated in herbs and leeks.


Add 6 cups of water, stir and bring to the boil. Once it's come to the boil you can turn to a medium heat. Cook for 8 minutes or until the pasta is cooked. Stir occasionally to ensure the pasta does not stick to the pan.

Towards the end of cooking add in the milk and stir together well.


Once the pasta is cooked turn to low heat. Do NOT throw the pasta water away, keep it in the pan.


Add the cream cheese & cheeses and stir through the pasta until fully melted.


Once the cheeses have fully melted, turn off the heat.


Serve and enjoy!
