Party Cookies

These fun, colourful and extremely delicious cookies are perfect for any party or celebration.

The cookies are packed full of vanilla, chunky squares of white chocolate and topped with lots and lots of colourful sprinkles - they're so much fun!

The texture of these cookies are awesome too. Crunchy and crumbly on the outside and chewy in the centre.

Kids and adults alike are going to love them and the best part is, they're super easy to make.


These cookies are baked in an oven dish and then cut into squares once cooled - personally this is our favourite way to bake cookies.

We find baking cookies in dishes and then cutting them into squares or slabs much easier and more time affective than making batches of individual cookies. How about you, what do you prefer?

INGREDIENTS


  • 300g of plain flour

  • 130g of butter

  • 100g of caster sugar

  • 100g of demerara sugar

  • 1 tsp of bicarbonate of soda

  • 270g of white chocolate (broken into chunky pieces)

  • 1 egg

  • 2 tsp of vanilla extract

  • pinch of salt

  • Approx 1/4 cup of your favourite sprinkles


METHOD


Preheat the oven to 190 C this is very important. Line your 30 x 20cm tray.

In a large mixing bowl add the flour, bicarb, salt and chocolate and mix with a spoon or your hands well and set to one side.

Melt the butter in a small saucepan and then add both the sugars.

Mix together well until the sugars have completely dissolved into the melted butter and then remove from the heat.

Add the vanilla extract and the egg and whisk together by hand until everything is fully incorporated (you need to move fast on this bit or else the egg will start cooking).

Quickly add this to the dry ingredients and mix together well. We find it best to use a spoon and then finish it off with our hands.

Evenly distribute the cookie dough across your lined tray.

Now evenly distribute all of the sprinkles until the top is fully covered.


Bake in the oven for exactly 25 minutes, remove from the oven and then allow to cool before cutting into your desired portion sizes.


Serve and enjoy!

Made up a batch of these for a party and they were so good. Loved that they were a slab and could be cut into smaller squares to share around. Tasted great too!
