Just when you thought that you had run out of new pancake recipes to try, we present to you this. This delicious cherry pancake cake is perfect for most occasions and everyone will love it. It's especially good to make if you have friends or family over and instead of standing in the kitchen for ages frying each individual pancake, you just simply add all of the pancake mixture to a tray and bake it in the oven. It's also great with yoghurt, ice cream, or crème fraîche if you'd like that.
With its layer of almonds on top and delicious cherries in every bite, we're certain that this will become a firm favourite and the colour is so much fun, so without further ado, let's get on with the recipe!

INGREDIENTS
Approx 10 - 12 servings
400ml of milk
400g of self-raising flour
3x large eggs
2x heaped tbsp of caster sugar
2x capfuls of vanilla extract
1x heaped tsp of baking powder
zest and juice of 1x large lemon
large handful of flaked almonds
230g jar of cherries in kirsh
pinch of salt
METHOD
Preheat the oven 210C
Start by adding all of the dry ingredients excluding the almonds to a large mixing bowl, then add your eggs, milk and vanilla extract and whisk together with a fork.
Then add your zest, lemon juice and cherries (including the kirsh liquid from the cherry jar) and then mix again until fully combined.
Transfer to a greased baking dish (we used a 27cm circular baking dish) And ensure to try and spread out the cherries equally. Sprinkle the top generously with the almonds and then bake in the oven for 30 - 35 minutes or until fully cooked.
Serve with desired toppings and enjoy!
