Pizza Stuffed Pancakes

If you've not yet tried these delicious pizza stuffed pancakes, then you've been missing out.

The pancakes are infused with fragrant Italian herbs and inside filled with loads of ham, cheese and ketchup.

When they're ready, cut them into pizza slices and just wait for the cheese to ooze from all sides...

We love them and think they're a perfect, quick and easy lunchtime meal that we guarantee will become everyone's new favourite.

The pancakes are super thick and fluffy and the combination of the pizza filling is AMAZING!

The cheese oozes and they are LUSH!

Anyway without further ado, let's get on with the recipe!

INGREDIENTS

Makes 3 large tea plate size pizza pancakes


For the batter


  • 420g self raising flour

  • Large pinch of salt

  • 1x heaped tsp baking powder

  • 1 & 1/2 tbsp dried Italian mixed herbs

  • 2x cups milk

  • 3x eggs


For the filling


  • 2x large handfuls of grated cheddar cheese

  • Approximately 5 slices of cooked ham - cut or tore into bite size pieces

  • Ketchup


METHOD


In a large mixing bowl and the flour, salt, baking powder & mixed herbs and combine together.

Now add the milk & eggs and whisk by hand using a fork. Do not use an electric whisk because your batter needs to be thick and lumpy - lumpy batter is key to thick pancakes.


Add a small drizzle of oil to a nonstick frying pan and heat for a few seconds on high before turning to a low heat.

Using a large serving spoon take a heaped spoon of the batter and place it in the centre of the pan. Spread it out to a circle shape. Don't worry if it's not perfect.

The batter is gloopy & a little sticky but this is the texture you need. You can use the back of a spoon to help with spreading etc.

It needs to cook for 2 minutes - while it's cooking go ahead and add a big squeeze of ketchup over the top (not to the edge).

Now add some ham and top with cheese.

Once you've added your pizza toppings it's time to add more of the batter mixture on top.

You'll need slightly less than your 1st scoop.

Using the back of a spoon spread the batter mixture to cover the pizza toppings.

After 2 minutes flip and cook for 4 minutes on the other side.

Once cooked repeat all of the previous steps until all of the batter has gone.

Serve and enjoy!

An absolute winner with my kids. Plus, mum and dad love them too. We added ham & pineapple and did some with mushroom and pepperoni.
